Cinnamon Love Cookies

I made these little beauties on a whim. I couldn't decide just how indulgent I wanted to be on Valentine's Day - but I've been looking at those heart shaped cookies cutter I bought a long time ago and have been dying for an excuse to use them. So what better day than Valentine's Day, amiright?!

So they're really not exactly what I would call "holistic", but they sure are better than a lot of other crap that's out there. So I'm still calling them decently healthy. Take it or leave it.


Here they are:

Cinnamon Love Cookies

Ingredients:

1 cup pastured butter at room temp (you could probably use coconut oil)

3/4 c raw honey

1 egg

1 Tbsp vanilla extract or powder

1 c buckwheat flour (I used sprouted flour)

1 c rye flour

1 c tapioca or arrowroot flour

2 tsp baking powder

1 Tbsp cinnamon powder


Icing: (I only made enough for half the cookies. Double this if you want to do them all!)

1/4 c coconut oil

1/4 c icing sugar

1 Tbsp vanilla bean powder


Directions:

- preheat oven to 350F

- cream together butter, honey, egg, and vanilla

- in a separate bowl, mix dry ingredients together

- slowly work dry ingredients into creamed butter mixture until smooth

- roll out onto counter top, using flour or icing sugar to coat

- cut out desired shape (I strongly recommend hearts ;) - place on cookie sheet (best on stoneware) and bake for 20 mins, or until edges JUST start to turn golden - set on cooling rack to completely cool

- for icing, cream mixture together (do not melt coconut oil or it will be too thin to stay on the cookies)

- put it piping bag and decorate as desired
