Super nutty fudge topped with chocolate? Does anything in this life really sound a whole lot better? The correct answer is no!
This is another amazing dessert that you don't have to feel bad about (my favourite). Because then you can eat it for breakfast! Or snack! Or dinner....
Lots of good fats in here!
The cool thing about this recipe is that it's so easy to switch up nut butters to create completely different flavours. I'll lay some ideas out for you down below!
Nut Butter Freezer Fudge
1 cup dates, pureed
1 cup nut butter (almond, peanut, hazelnut, pecan butter, or a mix)
1/4 cup coconut oil
1 Tbsp vanilla powder or extract
1/2 c of whatever you want on top (chocolate chips, coconut flakes, raspberries, goji berries, all of the above)
pinch of sea salt
Directions:
- To make date puree: if you have dates that are a bit hard, I recommend soaking them overnight. If you have relatively soft dates to start with, you can just go directly into the food processor, but might want to add a touch of water to help it along (about a tablespoon). Soaking them for 10-15 mins in warm water before pureeing also works!
- add date puree to everything else and mix well
- crinkle and wet parchment paper and line a small baking dish
- spread mixture evenly in
- top with whatever you're using as well as the sea salt (or more sea salt - it's fun to use course grind on top)
- freeze for an hour or more, and store in freezer
For this recipe today, I used a mix of almond, peanut and hazelnut butter. I find the mixes are better, and help to make the recipe cheaper as well (instead of just using something like almond butter that costs about a million dollars these days)
But this recipe is also great with just peanut butter, and sliced banana within in, or with almond butter, raspberries, and lemon zest on top. (Just remember that it's a good idea to use organic peanut butter if that is your choice, as peanuts are known to hold onto toxins.)
